What is this steam thing you have to use to play Civ 5 and is there any way of getting around it?

It's a digital gaming platform. And no, there is no possible way to get around it. The steamworks framework was used in the game, which means that no matter where you buy it, you must launch it through Steam.

I'm sure it was an oversight but telling people how to circumvent drm on a site which relies on publisher agreements isn't advised.

If anything steam will automatically update your game and you can even use it in offline mode...

Steam was selected by Sid Meier's to be DRM for the game. There no way of getting around it unless the game developer allows it. This is happening to a lot of games because developers want to prevent people from pirating the game.

steam is nessicary to run the game. It also allows the game to automatically update and helps to fix gliches.

Steam is great. It's a convenient program to keep/download/auto-update all your games, and many games from here can be added to your Steam account, such as this one.
